Bach is best
I agree with those who say that the best way to transition from piano playing to organ playing is to start with Bachs Orgelbuchlein. They are short chorales that are in every way Bach, but without the length and breadth of his larger works, including the organ sonatas/fugues/toccatas/etc. a great book at a great price given the quality of Barenreiter.
